That is a pretty impressive stove/pot setup. How easy is it to cook on? ie would it balance/support a pan for a 2 person meal?

Would have to be a damn small pan, lol

The backpacking stove generally serves a narrow purpose, boiling water for reconstituting dehydrated food.

I'll bet you could cook in the bottom of the pot though.

any pot that will hold 800-1000ml would work very well for 2 people re-hydrating meals. I actually cooked a meal for two last night. Only required 16oz of boiling water. I needed to burn through some of my "cash" of dehydrated meals before they expire.

Got the new tent the other day. Set it up this morning. Sets up much easier and faster by myself than the 4 person tent I've been using for a few years. It's the perfect size for the Arkansas trip. Can't wait to use it.

Bought some more gear this weekend. Got the footprint for the new tent ordered. Also picked up a thermarest pack able pillow, a new chair, and a camp chef rainier stove/grill/griddle combo. And this morning I placed my order for my 50qt fridge and slide. Not ashamed of my glamping.

I read an article in some magazine comparing them to other fridges like the ARB, National Luna, Engel, etc. I know they beat out the ARB. Pretty sure they beat everything but the NL. Anyway, it had the specs of them all on it. I'll see if I can dig it up later when I get to a computer.
